Instructions

Step 1
Preheat oven to 400° conv. Spray 3, 8 hole muffin tins with oil.
Step 2
Food process the carrots, onions, celery, garlic and tomatoes. Shred the zucchini. Saute the vegetables in a wok pan for 10-15 minutes until softened some. Season with the salt, pepper and Italian seasoning. Allow to cool a bit.
Step 3
In a large bowl gently mix the ground meats, eggs, Dijon, Worcestershire, cracker and bread crumbs. Then add the veggie mixture.
Step 4
Use a large disher to scoop the mixture into the muffin tins. Smooth off the tops and place @ 1 t of BBQ sauce on each.
Step 5
Bake for 20 minutes. Internal temp should reach 160°.
Step 6
There will be mixture left over. Put in a Ziploc and freeze for later use.
