1. Heat olive oil in a large pot over medium heat. Add carrots and saunte for three minutes. Add thyme, salt, and pepper. Add celery and onion and saunte three minutes or until clear. Add garlic and saunte one minute.
2. Mix Gia Russa Vegetable Flavored Soup Base and water. Bring mixture to boil, then reduce to low heat and cover. 3. Add Split peas and bay leaf. Salt and pepper to taste. 4. Cover and simmer, stirring occasionally until peas are tender, approximately 60-80 minutes.
5. Add carrots and potatoes to soup. Cover and simmer an additional 30 minutes sitting occasionally, or until soft.
6. Season work more salt if needed.
