Cabbage steak with onion aioli
Roasted Cabbage Wedges with Onion Dijon Sauce
Ingredients:
For the Roasted Cabbage:
1 medium head of green cabbage, cut into 6-8 wedges (keep the core intact for stability)
2 tablespoons olive oil
Salt and black pepper, to taste
1/2 teaspoon smoked paprika (optional, for added flavor)
For the Onion Dijon Sauce:
1 medium yellow onion, finely chopped
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 tablespoon apple cider vinegar (or white wine vinegar)
Salt and pepper, to taste
Water, as needed to thin the sauce
Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Cabbage Wedges:
Cut the cabbage into wedges, making sure the core remains intact for stability.
Place the wedges on a baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt, black pepper, and smoked paprika (if using). Toss gently to coat.
Roast the Cabbage:
Roast in the preheated oven for about 25-30 minutes, or until the edges are crispy and the cabbage is tender. Flip the wedges halfway through cooking for even roasting.
Prepare the Onion Dijon Sauce:
In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until softened and translucent, about 5-7 minutes.
Stir in the Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
If the sauce is too thick, add a little water to reach your desired consistency.
Serve:
Once the cabbage wedges are roasted, remove them from the oven and place them on a serving platter.
Drizzle the Onion Dijon Sauce over the cabbage wedges before serving.
