Ingredients

2 Tbspoil
1onion
finely chopped
4 clovesgarlic
finely chopped or 4 tsp crushed garlic
1 Tbspfresh ginger
grated
½ tspground chilli powder
1 Dspground cardamom
1 Dspground cumin
1 Dspcurry powder
1 dspturmeric
1 Dspgaram masala
1can coconut cream
1can chopped tomatoes
1kgfish
firm, eg Hoki, Ling, Red Cod cut into 3cm cubes
1 bagbaby spinach
1 cupfrozen peas
1 tspsalt
½ tspground black pepper
1 pinchasafoetida
Instructions
Step 1
Saute onion in oil until soft
Step 2
Add spices, season with salt and pepper
Step 3
Cook until spices are fragrant 1-2 mins
Step 4
Stir in coconut and tomatoes, bring to the boil
Step 5
Add fish, peas and spinach, simmer 3-4 mins until fish is cooked
