Prepare the soya chunks:

Boil the soya chunks in salted water for 5 minutes. Drain, rinse with cold water, and squeeze out excess moisture. Set aside.

Cook the aubergine:

Slice the aubergine into 1 cm rounds. Heat 20 g olive oil in a non-stick pan. Add the aubergine slices, season with salt, and cook on medium heat until golden and soft (about 3 minutes per side). Remove from the pan and set aside.

Make the tahini sauce:

In a small bowl, whisk together tahini, peanut butter, soy sauce, a splash of water, and spices (paprika, cumin, and chili flakes). Adjust with water to achieve a pourable consistency.

Glaze the soya chunks:

Heat the remaining 20 g olive oil in the same pan. Add the prepared soya chunks and cook until lightly browned. Pour in the tahini sauce and toss to coat. Let it cook for 2-3 minutes until the chunks are well glazed.

Arrange the cooked aubergine slices on a serving plate. Spoon the glazed soya chunks over the aubergine.
