Ingredients
4 servings
4slices bacon
diced
2 table spoonsunsalted butter
1brown onion
small, finely chopped
2celery stalks
finely chopped, optional
2 tablespoonsall-purpose flour
4 cupschicken stock
1 cupwhole milk
1 cupheavy cream
4russet potatoes
peeled and diced into 1/2 inch cubes
1 teaspoonpaprika
1 teaspoonchicken stock powder
salt
to taste
pepper
to taste
2 cupscheddar cheese shredded
For Topping
Instructions
Step 1
Cook the bacon in a soup pot, then remove and set aside.
Step 2
Add the diced brown onion and celery to the pot with the bacon fat and sauté.
Step 3
Add butter, flour, milk, cream, chicken stock, paprika powder, chicken stock powder, salt and pepper. Stir to combine.
Step 4
Add potato cubes and bring to boil. Cook for 20 minutes or until the potatoes are cooked.
Step 5
Add the bacon and cheddar cheese (leaving some aside for garnish), stir to combine and cooke for a little while longer for the cheese to melt.
Step 6
Transfer to soup plates and garnish with sour cream, cheddar cheese, bacon and spring onion. Serve a side of toasted ciabatta.
