Slow cooker sweet and sour chicken

Instructions

Step 1
Put the chicken in the pot of the slow cooker, then toss in the peppers, onion and garlic. Stir in the vinegar, tomato purée, tomato ketchup, soy sauce and sugar.
Step 2
Strain the juice from the tin of pineapple chunks, setting aside the chunks for later. Pour the pineapple juice over the chicken in the pot. Cover the pot with the lid.
Step 3
Set the slow cooker to 'cook' mode, then turn it either to high and cook for 2 hours 30 minutes or to low and cook for 5 hours.
Step 4
Remove 3 tablespoons of the sauce and combine with the cornflour in a small bowl to make a smooth paste. Stir this cornflour paste back into the sauce in the pot. Continue to cook on high, with the lid off, for a further 10 minutes or until the sauce has reduced and thickened. Season to taste.
Step 5
When ready to serve, spoon the sweet and sour chicken into bowls filled with steamed rice.
