No Bake Lemon Cheesecake (low carb)

Fast, easy and delicious. A low stress diabetic friendly dessert. Please note: use a liquid sweetner like stevia drops to equal 1/2 cup sugar. Granulated or powdered sweetner can make the filling gritty.

Instructions

Step 1
Mix together crust ingredients until well combined. Line a spring form pan with parchment. Press crust evenly in bottom of pan. In a large bowl or food processor blend cream cheese and everything except the hot water and jello and blend until very smooth. In a small bowl combine just boiled water to jello and stir until dissolved. Pour into cream cheese mixture while beating or processing. Pour over crust in pan and chill until firm.
