Instructions

Step 1
Cook orzo according to instructions. Save some of the pasta water.
Step 2
Dice and fry the onion and garlic in olive oil until soft.
Step 3
Slice or crumble the vegan sausage and add to pan. Fry until crispy.
Step 4
Dice bell peppers and tomatoes and add to pan. Cook for around 10 minutes.
Step 5
Add tomato paste and seasoning and fry for another minute, then add some of the pasta water.
Step 6
Rinse chickpeas and stir together with the cooked orzo into the pan.
Step 7
Stir in some vegan parmesan and season to taste.
