Instructions
Step 1
Chop the vegetables: Chop the onion, carrot, and potato for faster cooking.
Step 2
Rinse the lentils: Wash the red lentils thoroughly with plenty of water.
Step 3
Sauté the vegetables: Heat the olive oil in a large pot. Add the chopped onion and sauté until softened. Then, add the carrot and potato and cook for a few more minutes.
Step 4
Add lentils and liquid: Add the lentils and 7-8 cups of water or broth. Stir well and bring to a boil. Once boiling, reduce the heat and let it simmer for about 25-30 minutes, or until the lentils and vegetables are soft.
Step 5
Blend until smooth: Remove from heat and let the soup cool slightly. Then, blend with an immersion blender (or transfer to a stand blender) until completely smooth. If the soup is too thick, add a bit more hot water or broth to adjust the consistency.
Step 6
Season and finalize: Return the soup to the stove, add salt, black pepper, and cumin. Let it simmer for another few minutes while stirring. If using flour for a thicker consistency, mix it with a little water before adding to avoid lumps.
Step 7
Serve hot: Optionally, drizzle with melted butter or olive oil before serving.
