Southern-style Chuck Roast - Instant Pot Via Instructions

Enjoy your fall-apart tender southern style chuck roast using the Instant Pot Via.
You can expect approximately 6 servings for a 3 lb roast, or more if you are serving alongside sides.

Step 1
1. Prepare the Roast: Pat the chuck roast dry, layer of EVOO, then season with salt, black pepper, ranch, and onion mix

2. Sear the Meat (Optional but Recommended for Flavor): Press "Sauté" on your Instant Pot Via and allow it to heat up. Add oil and sear the roast for about 2–3 minutes per side until browned. Remove the roast and set aside.

3. Sauté Aromatics: In the same pot, add butter, then chopped onion and cook for 2 minutes. Stir in garlic and tomato paste (if using), sautéing for another 30 seconds.

4. Deglaze the Pot: Pour in beef broth and Worcestershire sauce, scraping the bottom to release any browned bits.
Step 5
5. Pressure Cook the Roast: Return the chuck roast to the pot. Add thyme, carrots, and celery, pepperoncini, and potatoes on top. Close the lid and set the pressure release valve to "Sealing." Select "Pressure Cook" (High Pressure) for 60–75 minutes (60 min for a 3 lb roast, 75 min for a 4 lb roast).

6. Natural Release for Tender Meat: Once the cooking cycle is complete, allow Natural Pressure Release (NPR) for 15–20 minutes. Then, switch the valve to "Venting" to release any remaining pressure.
Step 7
7. Shred and Serve: Remove the roast and shred with two forks. If you want a thicker gravy, mix 2 tbsp cornstarch with ¼ cup water and stir into the pot. Use "Sauté" mode for 3–5 minutes until thickened
