Instructions
Step 1
Combine biscuit crumbs with butter. Press into 23cm pie plate or ramekin cups.
Step 2
Mix the condensed milk, rind, lemon juice and egg yolks. Spoon onto the crumb crust.
Step 3
Beat the 6 egg whites in clean, dry TM5 bowl (butterfly tool, 3mins, 50°C, speed 3.5) until stiff.
Step 4
Gradually add castor sugar (butterfly tool, approx. 3mins, speed 2.5). Spoon meringue onto lemon mixture. Bake in moderate oven 15 min until golden.
