Instructions

Step 1
Water, sugar in a pot.

Let water sizzle until most of the water is gone.
Step 3
Add salt and cayenne.
Step 4
Spread on parchment paper.
Step 5
Throw in the almonds.
Step 6
Wait until the color begins to change.
Step 7
Water is gone and the sugar is crystalline around the almonds.
Step 8
Turn down heat as sugar caramelized.
Step 9
Keep stirring as sugar begins to melt.
Step 10
Turn off heat. Throw in some butter. Keep stirring.
Step 11
Transfer almonds to sheet pan covered with parchment paper.
Step 12
Spread out almonds and sprinkle with sea salt.
