Pan de Higo, also known as Spanish Fig Cake or Spanish Fig Bread, is a traditional Spanish dessert, snack, or appetizer made from just figs and almonds. It's naturally free of gluten and added sugars, typically having just nuts, dried fruit, cinnamon, brandy, and sometimes honey. These are essentially Larabars, which are energy snack bars made from just dried fruit and nuts

Step 1

In a powerful food processor, blend together dried fruit, nuts, cinnamon, and rum extract until as combined as possible. You'll end up with a very sticky dough spinning around in your food processor. You want as little bits of fruit and nuts as you can, but some chunks are okay




Step 2

Line a meal prep container (my glass ones are 4.5 x 6.2") with parchment paper. Press the dough into the pan, and top with parchment paper. Press dough hard to spread it to all sides, and ensure even thickness. Remove the paper
Step 3

Chill in the fridge for at least 1 hour before slicing
