Preheat oven to 180°C

On the stove, melt the margarine and sugar in a pot. One melted remove from heat.

Add the mashed bananas to the pot.

In a jug beat the egg with the milk and vanilla extract.

To the pot, add the flour and bran flakes and mix until incorporated.

Now add in the milk mixture to the pot and stir well. The batter should be a little runny.

Pour the batter into your prepared muffin pan and bake for 20min or until a toothpick comes out clean
