Step 1
1. **Make the Cilantro Marinade:**

Blend cilantro, mint (if using), garlic, ginger, chilies, yogurt, cumin, coriander, lime juice, and salt until smooth.

Add a little water if needed.

2. **Marinate the Chicken:**

Coat chicken in the cilantro mixture. Let it marinate for at least 30 minutes, or overnight for more flavor.

3. **Cook the Curry:**

Heat oil in a pan. Sauté onions until golden. Add marinated chicken (including the marinade). Cook over medium heat until chicken is done, about 15-20 minutes. Add a bit of water if it dries out.

Taste and adjust salt or lime. Garnish with more chopped cilantro if desired.
