Crispy, salty, cheesy, and indulgent, these homemade crisps are next-level. Air-fried to perfection and piled high with gooey brie, ribbons of Serrano ham, and briny green olives, they’re the ultimate snack or starter that feels fancy but takes hardly any time.

Step 1
Wash and peel the potatoes (optional), then slice thinly using a mandoline or sharp knife. Aim for paper-thin slices. Soak in cold water for 10-15 minutes to remove excess starch.
Step 2
Drain and dry thoroughly with a clean tea towel. Toss with olive oil and a generous pinch of sea salt.
Step 3
Preheat your air fryer to 180°C. Spread slices in a single layer (work in batches) and air fry for 10-12 minutes, shaking halfway through, until golden and crisp.
Step 4
Once all crisps are done, layer them in the basket or an ovenproof dish. Top with brie, Serrano ham, and green olives. Air fry at 160°C for 2-3 minutes until the brie melts.
Step 5
Sprinkle with thyme and black pepper and serve warm. So melty, salty, and sensational!
