Instructions
Step 1
Put peaches, butter, and lemon juice in very large pot and heat to boil stirring frequently to prevent sticking and burning
Step 2
Mix sugar, jello, and pectin in a bowl and set aside
Step 3
When the fruit is boiling stir in the dry sugar mix until dissolved
Step 4
Cook stirring until a full rolling boil is reached then start testing for sheeting every few minutes. The fruit should all be translucent. About 215- 220 degrees F.
Step 5
Ladle into hot clean canning jars , wipe rims and put on hot lids. Water bath 10 minutes.
