These air-fried chicken sausage nuggets are a fun, easy, and healthier twist on a family favourite. Packed with flavour and secretly loaded with veggies, they’re the perfect solution for fussy eaters or anyone wanting to sneak a little extra goodness into their meals.

Instructions

Step 1
In a blender or Nutri bullet (or with a masher and some effort!), combine the chicken sausage meat and defrosted mixed veg. Blitz until well combined but still with a bit of texture.
Step 2
Stir in the garlic powder, onion powder, paprika and a pinch of salt and pepper.
Step 3
Put the flour in one bowl, beat the eggs in a second bowl, put the breadcrumbs in a third bowl.
Step 4
Dip each nugget first in flour, then in the beaten egg, then roll in breadcrumbs until fully coated.
Step 5
Lightly spray the nuggets with olive oil and place them in the air fryer basket in a single layer (work in batches if needed). Air-fry on 190c for 12–15 minutes, flipping halfway and spraying again lightly, until golden brown and cooked through.
Step 6
Serve hot with your favourite dipping sauce, or in a wrap with some salad.
