Step 1
1. In a food processor, blend the walnuts and dates (and salt, if using) until the mixture forms a sticky, dough-like consistency.

2. Remove the bowl from the processor and fold in the chocolate chips by hand.

3. Enjoy immediately as cookie dough, or roll into energy bite–sized balls. For firmer texture, refrigerate for 15–30 minutes.
