Cinnamon Roll Cheesecake

Instructions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
Crush the digestive biscuits or graham crackers into fine crumbs and mix with the melted vegan butter.
Step 3
Press the mixture into the base of a springform pan to form the crust.
Step 4
In a bowl, mix the vegan cream cheese, sugar, vanilla extract, and plant-based milk until smooth and creamy.
Step 5
Pour the cheesecake mixture over the biscuit base.
Step 6
In a separate bowl, mix the ground cinnamon and brown sugar and sprinkle it over the cheesecake mixture. Use a knife to gently swirl it through the mixture.
Step 7
Bake in the preheated oven for 40-45 minutes or until set.
Step 8
Allow the cheesecake to cool to room temperature, then chill it in the fridge for at least 4 hours or overnight.
Step 9
Before serving, top with vegan whipped cream and mini puff pastry cinnamon rolls.
Step 10
Mix powdered sugar with water to create glaze and drizzle it over the top.
