Instructions
Step 1
Add the butter, sugar, rum and juice to a pot and bring to a boil until the butter is completely melted.
Step 2
Now add in the dried fruits and nuts and bring to a boil on medium heat.
Step 3
Remove from heat then add in all the spices. Mix well. The leave to completely cool.
Step 4
Once cooled, add the baking powder and baking soda. Then mix in the eggs, one at a time. Now add in the flour, half a cup at a time until fully incorporated.
Step 5
Transfer to a large, greased baking pan and bake in a preheated 160°C oven for an hour to 1.5hrs until a toothpick comes out clean.
