Chili Basil Dipping Oil

Oil infused with fresh basil has extraordinary flavor, yet is so simple to make. Serve it in a bowl with a sprinkling of fresh chopped basil sprinkled on top. Use a crusty french bread to dip. Recipe modified from the book Small Batch Preserving.

Instructions
Step 1
Place oil, basil, halved chili pepper and peppercorns in an over safe dish. Bake at 300°F for 90 minutes, or until the basil is blackened and crisp. Remove to a rack and cool for at least30 minutes.
Step 2
Use a coffee filter, or layers of cheesecloth to filter oil into a container with a lid. Store in refrigerator, and use within 1 month.
