Pink and Yellow Lemon Coconut Ice

A bright, zesty twist on classic coconut ice, made with rich condensed milk, fine coconut and a splash of lemon flavour. Layered in soft pastel pink and sunny yellow, these sweet little squares are creamy, chewy, colourful and dangerously easy to keep eating.

Instructions

Step 1
Line a small square baking dish or loaf tin with baking paper.

Add the icing sugar and desiccated coconut to a large bowl and mix well.

Gradually add the sweetened condensed milk, mixing until the mixture is thick, sticky and firm enough to press into shape.

Mix in the lemon extract. Taste a small amount and add another drop or two only if you want a stronger lemon flavour.

Divide the mixture evenly between two bowls.

Add a few drops of yellow food colouring to one bowl and mix until pale yellow.

Add a few drops of pink food colouring to the other bowl and mix until soft pink.

Press the yellow mixture firmly and evenly into the bottom of the lined container.

Press the pink mixture evenly over the yellow layer.

Refrigerate for 2 hours, or until firm.

Lift the coconut ice out using the baking paper and cut it into small squares.
