Figgy Sandwich with Cheese and Fig Relish

In this recipe, there are three main elements: 1) Cristal bread, 2) goat cheese mousse dipped with toasted fig leaf powder and heavy cream, and 3) fig, olive, and pecans relish (recipe https://s.samsungfood.com/GKSNU). Mooring leaves, olives, pecans, and fresh figs are the toppings. This is the most beautiful sandwich I've ever created. It is as beautiful as it is delicious!

Instructions

Step 1
Toast bread.

Add the pecans and figs and gently fold to incorporate them. Season to taste with salt and pepper.

Transfer to a glass jar or plastic container, seal tightly, and store in the refrigerator for up to 10 days.

Pipe the cheese mousse over the toasted bread. Spoon the relish making three dollops with a space between them. Decorate with sliced olives, quartered figs, sliced pecans, and mooring leaves (or micro greens).
