Instructions

Step 1
Shred the chicken, slice the cucumber, shred the cabbage and lettuce and chop the parsely.
Step 2
Toast the bread. Mash the avocado.
Step 3
Combine mayo, lemon juice, chicken, cucumber, lettuce and most of the parsely and toss well.
Step 4
Spread the avocado thinly across the toast, then top with chicken slaw. Garnish with parsley and season with black pepper.
