chopped, pecans or sliced crystalised ginger, optional for topping

Instructions
Step 1
The below are for a two-litre slow cooker.
Step 2
1. Switch slow cooker on to heat up while you are prepping .

2. Mix flour, baking powder, sugar, spices in a bowl.
Step 4
3. Chop apples, with approximately half in larger pieces (about 2cm x 1cm) if you like to keep some apple distinct. Smaller pieces dissolve into the sponge.

4. Make a well in the middle and pour in oil and eggs. Stir well.

5. Stir in chopped apples until evenly coated (the cake mixture only just covers the apples at this point)

6. Line slow cooker with baking/parchment paper.
Step 8
7. Spoon mixture in. Sprinkle nuts (which are nice if you toss them in a frying pan for a few minutes first) or crystalised ginger on the top if desired.

8. Place tea towel under the lid to absorb the condensation so the top of the cake doesn’t get soggy.
Step 10
9. Cook for 2 hours on full. Test with a knife down the middle. If it comes out clean the cake is done (even if the cake is sticky on the top in the middle it might actually be cooked inside just fine).

10. If it needs more cooking but the edges are starting to burn, turn down to half and cook for another 30 – 60 minutes.
