Instructions

Step 1
Heat a large frypan over medium-high heat and spray with olive oil. Add corn and cook for 5 to 8 minutes or until the edges start to golden. Add the taco seasoning and cook for another minute. Transfer the corn to a small bowl and set aside.
Step 2
Return the same pan to heat, spray with oil and cook the haloumi for 2 to 3 minutes on each side, or until lightly golden.
Step 3
Meanwhile, combine the tomato, red onion and coriander in a small bowl. Squeeze over lime juice, season and set aside.
Step 4
To a small mixing bowl, add the guacamole ingredients and mash well to combine.
Step 5
Heat tortilla in the microwave or on a dry frypan. Transfer to a serving dish, top with tomato salsa, haloumi and guacamole. Serve.
