Ingredients

1 cuprice
2 tspvegetable oil
1onion
large
1 x 15 ozcan red beans
or white
15 ozcan black beans
14.5 ozdiced tomato seasoned with garlic and onion
1clove garlic
1 cupyellow corn
1 tspchili powder
½ tspground cumin
0.5 cpshredded cheddar cheese
or Mexican blend
Instructions
Step 1
Prepare rice as normal
Step 2
Heat oil in a deep 12" skillet over medium heat
Step 3
Peel and coarsely chop onion, add to skillet as you chop
Step 4
Cook onion for 2 minutes, stirring occasionally while you rinse and drain red or white beans
Step 5
Add beans to the skillet, adding black beans with their juices
Step 6
Add tomatoes, with their juices
Step 7
Add garlic
Step 8
Add corn, chili powder, and cumin
Step 9
Reduce the heat to low and simmer until heated through, about 2 minutes
Step 10
Serve over prepared rice
