Pomegranate and chilli margaritas

Instructions

Step 1
Serves 6-8
Step 2
Put the sugar in a saucepan with 400ml water.
Step 3
Add 2/3 of the pomegranate seeds
Step 4
Prepare 10 minutes and the chillies; bring to the boil.
Step 5
Reduce the heat a little and leave to simmer over
Step 6
Cook 10 minutes a medium heat for 8-10 minutes, until thickened slightly.
Step 7
Set aside to cool then strain, discarding the chillies and seeds.

• 200g caster sugar

2 When you are ready to make the margaritas, mix 75ml of the pomegranate syrup
Step 10
• 1 pomegranate, seeds only with the pomegranate juice, tequila, Cointreau and lime juice.
Step 11
Taste and add a little 2-3 red chillies, halved more syrup, if you like – I like mine quite sweet.
Step 12
Fill glasses with ice, add the lime slices lengthways and remaining pomegranate seeds, then pour over the margarita mixture and serve.
Step 13
Store any leftover pomegranate syrup in an 125ml Cointreau • 6-7 limes, 125ml juice, airtight container in the fridge and use as a dressing for 1 sliced a winter tropical fruit salad.
