In a pinch you can skip infusing the bourbon, but if you do this you should include the bitters. Simple syrup should last a couple months in the fridge. Use large ice cubes if possible, just because they look nice. I prefer to use white absinthe, but you can also try green absinthe. Just be careful not to make the drink too bitter.

Instructions

Old Fashioned

Step 1
Add syrup, whiskey, absinthe, cointreau, and vanilla to your glass. Squeeze a few drops of orange juice into the glass. Stir and taste, adding bitters if desired.
Step 2
Add ice and garnishes (orange peel, and a sprig of rosemary), and serve.

Infused Bourbon

Step 3
Add rosemary, orange peel, and warm whole spices (cinnamon, nutmeg, cloves, star anise, etc) to a large jar. Then fill the rest of the jar with bourbon.
Step 4
Let sit for 2-3 days, or until somatic without being too bitter.

Rosemary Syrup

Step 5
Add water, sugar, and rosemary to a pot. Bring to a light boil.
Step 6
Once the sugar is completely dissolved (the water should look clear), reduce heat, and allow the Rosemary to steep until it loses its color (about 15 minutes).
Step 7
Remove the rosemary sprigs, and transfer the syrup to a bottle or jar. Close the lid and allow it to cool on the counter before transferring it to the fridge.
