Instructions
Step 1
Press sauté to preheat the Instant Pot.
Step 2
When the word "hot" appears on the display, add the rice.
Step 3
Toast the rice in the dry pot, stirring frequently, about 2 minutes
Step 4
Add the chicken stock, Cajun seasoning, chicken and bell pepper and stir.
Step 5
Secure the lid with the steam vent in the sealed position.
Step 6
Press manual and immediately adjust the timer to 9 minutes.
Step 7
Check that the display light is beneath high pressure
Step 8
When the timer sounds, quick release the pressure and carefully remove the lid.
Step 9
Season to taste and serve.
