Red pepper zucchini noodles

Delicious noodle dish made with half zuchini noodles and half regular noodles . Sweet Red pepper flavor with fresh veggies and parmesan to top . Serve with warm bread or a side salad.

Instructions
Step 1
Spiralize or peel 2 large zucchini to resemble noodles.
Step 2
Add olive oil to sauce pan , add zuchini noodles , about one cup of chopped fresh asparagus , 1/4 cup chopped red onion , 2 cloves of garlic .
Step 3
Boil spaghetti noodles in separate pot while veggies cook.
Step 4
Add 2 tbsp tomatoe paste , seasonings and 4 tbsp red pepper spread to veggies . Add broth to slightly thin out sauce .
Step 5
Add cooked noodles to veggie pan , add extra broth or pasta water if needed .
Step 6
Chop 1 cup baby tomatoes and add to pan with 1/2 cup parmesan cheese .
Step 7
Serve with warm garlic bread
