Step 1
1. Whisk flour, bak pow, salt in a med bowl. Beat butter and gr sugar on med until fluffy, 3 min. Add eggs 1 at a time, beating well. Add lime zest and juice. Add food coloring. Reduce mixer to low, slowly add dry mix, beat to combine. Cover dough and refrigerate until firm, 45 min.
Step 2
2. Position racks on upper and lower thirds of oven, preheat to 350°. Line 2 bak shts w/parchment. Combine conf sugar, sand sugar in sm bowl. Roll T dough into balls, roll in sugar mix. Place 2" apart on bak sht.
Step 3
3. Bake 18-20 min, until puffed and cracked. Switch pans halfway through. Cool 5 min on pans before trans to racks.
Step 4
Alt for key limes: regular lime zest and 1 1/2T each lemon and lime juice.
