Instructions

Step 1
Cut a spaghetti squash in half length wise . Scoop out seeds, drizzle each half with olive oil , salt and pepper . Bake at 400 ° for 40 minutes flesh cut side down .
Step 2
For sauce : In pan cook 4 cloves garlic on olive oil, add half a red onion finely chopped cooking until translucent.
Step 3
Add canned diced tomatoes to pan , with all seasonings.
Step 4
Cut in half about a cup of baby pearl tomatoes , add to pan
Step 5
Add 2 tbsp red pepper sauce
Step 6
Cook on low heat for 15 minutes , let simmer .
Step 7
Add a splash or 2 of red wine , deglaze pan
Step 8
Add chicken stock if needed to thin out sauce .
Step 9
Simmer sauce for 30 more minutes on low .
Step 10
Cook 2 oz spaghetti noodles and add to sauce
Step 11
With a fork , brush spagetti squash to make strings. Fill spagetti boat with sauce and noodles mixture .
Step 12
Top with parmesan cheese and a side of garlic bread
