Step 1
Boil noodles in 500ml vegetable stock until soft
Step 2
Saute onion, ginger, garlic, green chillies and mushroom in groundnut oil on medium flame for 5 mins
Step 3
Add vegetable stock and noodles to the sauteed veggies
Step 4
Garnish with spring onion greens, and serve hot
