Ingredients

1 ¼ cupsheavy cream
1 lbbittersweet chocolate
grated
1 ½ cupsunsweetened cocoa powder
sifted

Instructions
Step 1
Pour cream into a heavy saucepan or top of double boiler and bring to a boil. Remove pan from heat and let cool until lukewarm.
Step 2
Add grated chocolate and beat w an electric mixer for 5 minutes. Set aside to cool, then beat again for a further 5 minutes.
Step 3
Transfer bowl to the refrigerator and chill for 10 minutes or more until mixture is firm enough to shape with your hands.
Step 4
Sift cocoa in a deep bowl or spread thick layer on tray.
Step 5
Make sure your hands are clean and dry and dust with cocoa.
Step 6
Quickly shape 2 tsp of chilled mixture into a ball and roll in cocoa, then in other ingredients if further decorating.
Step 7
Place in paper liners. Truffles will keep for a few weeks in an air-tight container in the refrigerator.
