Step 1
Cook macaroni and drain; transfer to ovenproof casserole
Step 2
Grate cheese
Step 3
Preheat oven to 180c
Step 4
Melt butter over low heat and dissolve flour into it
Step 5
Add milk to butter and flour, and melt grated cheese into the mixture as it heats
Step 6
When roux comes to a boil, add nutmeg and let boil gently for a minute to thicken
Step 7
Pour mixture into casserole, stir into macaroni
Step 8
Coat lightly with breadcrumbs
Step 9
Bake for 25 minutes or until breadcrumbs are golden brown
