My husbands favorite soup of all time, but with my own little twist. Perfect for getting in the fall mood with this lovely soup . Serve alongside a crusty piece of garlic bread.

Instructions
Step 1
Add olive oil to pot - saute 1 large onion , 1 cup diced carrots , 1 tbsp garlic,1 cup celery , 1 large zucchini until slightly translucent.
Step 2
Season veg with salt , pepper , Italian seasoning
Step 3
Add about 1/4 cup tomato paste to veg mixture and cook down
Step 4
Add a splash or 2 of red wine
Step 5
Rinse beans and strain- add 1 can red kidney beans and 1 can white beans to pot
Step 6
Add about 64 oz veggie stock
Step 7
Add 1 cup small shell noodles of your choice
Step 8
Cook soup on medium high heat until it comes to slight boil , let simmer on medium heat until noodles are fully cooked .
Step 9
Add 1/2 cup parmesan cheese , 2 cups spinach and fresh parsley once noodles are cooked .
Step 10
Serve with your favorite crusty buttered garlic bread
