Instructions
Step 1
Butterfly chicken breasts and rub on dry ingredients and some coconut cream.
Step 2
cover and leave in fridge to marinate
Step 3
add olive oil into pan on medium high heat. sear chicken on both sides till golden brown (4-5min). Set aside
Step 4
Add chopped onions and cherry tomatoes into the same pan, stir
Step 5
after about a minute, add minced garlic and onion into pan, stir
Step 6
turn heat to low. add same dry ingredients + tumeric, cumin, garam masala, keep mixing to not burn the spices
Step 7
drain and add chickpeas
Step 8
add vegetable broth and coconut cream
Step 9
add spinach, allow to wilt and add chicken back in
