Instructions

Step 1
Combine sugar, corn syrup, and water in a 12" heavy skillet.
Step 2
Cook slowly over medium high heat, stirring constantly until sugar is dissolved. Continue cooking until mixture reaches the soft ball stage. (236 degrees)
Step 3
Add peanuts and salt; cook to hard crack stage (~302 degrees). Best to have butter and soda prepared ahead of time to allow for quick adding to mix. Remove from heat and promptly add butter and soda, stirring to blend (mixture will foam).
Step 4
Pour onto 2 large buttered baking sheets (We have found that using disposable aluminum baking sheets works great). Lift candy around edges with spatula and run spatula under candy to cool it partially and keep it from sticking. (Never had a problem with it sticking using the disposable aluminum baking sheets,)
Step 5
When cool, turn pans upside down and break into pieces.
