1kgboneless pork shoulder
255mlpale ale
red onion
¾ Tbspgarlic powder
¾ Tbsponion powder
¾ Tbspapple cider vinegar
¾ Tbspsalt
1 ½ tspblack pepper

Instructions
Step 1
Mix 3 tbsp achiote paste with the rest of the herbs and seasoning, and the juice of an orange. Put that at the bottom of the slow cooker
Step 2
Add 1kg boneless pork shoulder and coat evenly with marinade.
Step 3
Pour in 255ml pale ale.
Step 4
Cook on the Slow Cooker in LOW for 8 hours or HIGH for 4 hours.
Step 5
In the meantime, chop the onion and mix with the juice of a lime. Add salt to taste.
Step 6
After the designated time, remove the pork and let it cool, then shred it.
Step 7
Remove the liquid and let it cool, then skim the fat.
Step 8
Add both the pork and the liquid back into the pot.
Step 9
Serve in cornflour tortillas with the pickled onion and coriander
