Melina's roasted vegetable pasta sauce
This recipe is awesome for clearing out all the veggies in the fridge that are starting to look a bit...wilty, shall we say? I've been struggling with using all of my CSA bounty, and this really, really helps--and is my new favorite sauce. My family didn't even notice the kale, which was a huge win!!!

Step 1
Combine garlic cloves, onions, kale, carrots, bell pepper, and scallions in oven safe dish. Drizzle with oil, toss to coat. Roast at 450° until fragrant and soft. Meanwhile, cook ground beef until browned, breaking up well. Add garlic paste, squeezable basil, and salt/pepper to taste. Mix well. Cook until fragrant. Add tomato sauce, stir to combine, and reduce heat to low. When veggies are done, transfer roasted vegetables to blender. Pulse until sauce forms. Add sauce to pan with other ingredients. Add 12 oz water.to blender and process to get all of veggie sauce loosened; add to pan. Cover and simmer on low for 2+ hours
