Instructions

Step 1
Preheat the oven to 180°C/350°F. Spray a loaf tin with olive oil and line a baking tray with baking paper, set both aside.
Step 2
In a small bowl, combine the glaze ingredients, and set aside.
Step 3
Heat a frypan over medium-high heat and add 2 teaspoons of olive oil. Cook the onion, mushrooms and thyme for 5 to 7 minutes, until they begin to soften. Add the garlic and cook for another 1 to 2 minutes. Transfer the mushroom mixture to a bowl and set aside.
Step 4
Return the pan to heat and add the walnuts, toasting for 3 to 4 minutes, until they start to darken (keep a close eye on them, they can burn easily!). Transfer to a chopping board and chop or crush the walnuts, then add to the bowl with the mushrooms.
Step 5
Add the remaining meatloaf ingredients to the bowl and, using your hands, mix until well combined. Add 2 tablespoons of the glaze and continue to work with your hands until combined. Transfer the meatloaf mixture to the prepared loaf tin and smooth out any cracks in the surface.
Step 6
Pour half the glaze over the meatloaf and bake for 25 to 30 minutes. Remove from the oven and pour over the remaining glaze. Continue baking for about 20 minutes. Once cooked through, remove from the oven and cool in the loaf tin for 10 minutes before removing.
Step 7
Place the potatoes and carrots on the baking tray, spray with olive oil and season. With 20 minutes cooking time remaining on the meatloaf, add the tray of vegetables to the oven. Rotate after 15 minutes and add the green beans to the tray. Cook for another 5 minutes until the beans are tender and the potatoes and carrots are golden. Remove from the oven and sprinkle with remaining parsley.
Step 8
Turn the meatloaf onto a chopping board and cut into thick slices. Serve with the potatoes, carrots, beans and tomato sauce, if desired.
