Instructions

Step 1
Preheat fan oven to 180c
Step 2
Spread sweet potato cubes on baking tray and drizzle olive oil on them
Step 3
Remove rosemary leaves from sprig and sprinkle over sweet potatoes
Step 4
Roast sweet potatoes for 20 minutes
Step 5
Chop onion and garlic, then roast with sweet potatoes for additional 10 minutes
Step 6
Whisk eggs and milk together in bowl
Step 7
Heat olive oil in frying pan on high heat, adding sweet potato and onion straight from the oven when hot
Step 8
Cover with eg mixture and reduce pan to medium heat
Step 9
Cook until egg mixture begins to set, first visible around the edge
Step 10
When the top of the frittata is almost set, transfer t oven for further 10 minutes
Step 11
Allow frittata to cool for a few minutes before flipping onto a chopping board to serve
