Ingredients
4 servings
3bell peppers
diced, use different colours for the aesthetics sis
1brown onion
chopped
4 clovesgarlic
chopped
1can black beans
1can chopped tomatoes
1 cupchicken broth
200grice
300gmussels
optional
salt
black pepper
olive oil
paprika powder
optional
parsley
to taste
oregano
to taste
mixed herbs
to taste
ground cumin
cayenne pepper
Instructions
Step 1
Heat olive oil in a pan and sauté the peppers for about 2-3 minutes
Step 2
Season with salt and pepper
Step 3
Add onion and garlic, cook for 2-3 more minutes and pour in canned tomatoes and spices
Step 4
Add the rice and the vegetable broth.
Step 5
Season again with salt and pepper
Step 6
Cook for 15 minutes (without the lid).
Step 7
Add the black beans and cooked mussels (optional), stir and ensure well mixed and cook for 5 more minutes.
Step 8
Sprinkle herbs of choice
