4 cupspineapple
chopped
½ cuponion
finely chopped
¼ tspkosher salt
⅛ tspblack pepper
fresh ground
1 Tbspbutter
½ cupapple cider vinegar
1 cupbrown sugar
packed
¼ cupbourbon
3 Tbspfresh ginger
minced
1 Tbsplemon zest
1 Tbspfresh lemon juice
1 pinchallspice
fresh crushed, mortar and pestle
½ tspred pepper flake
1cinnamon stick
Instructions
Step 1
Sautee onion, salt, pepper until softened (2 mins)
Step 2
Marinate pineapple in bourbon 30 mins
Step 3
Add garlic for 1 min
Step 4
Add brown sugar, vinegar, lemon zest, lemon juice, cinnamon stick, allspice. Simmer until thickens
Step 5
Remove cinnamon stick
Step 6
Add marinated pineapple. Simmer at least 5 mins until you get the consistency you desire. reserve remaining bourbon pineapple liquid to adjust flavor and consistency as needed.
Step 7
Serve warm or chilled. Store covered in refrigerator.
