I decided to make some peanut butter and jam cookies with the salted Virginia peanuts and they turned out amazing! I experimented for a while until I got this amazing flavor! These melt in your mouth cookies are so delicious and the best part is the chopped peanuts in every bite!

1. Beat the sugar and ghee in the mixer until fluffy

2. Add the flour and mix until the flour is incorporated

3. Add the peanut butter and mix

4. Fold the crushed peanuts in

5. Place the dough in a bowl and cover it, chill in the fridge for 20 minutes

6. Take the dough out of the fridge and divide it into equal size balls
Step 7
7. Press down on each piece then place a jam in the middle of each ball.
Step 8
8. Place the cookies on a lined baking sheet
Step 9
9. Bake the cookies in the middle of the oven at 300 degrees for 15 minutes
Step 10
* Test bake one cookie before you bake the whole batch, if cracks appear on top, that means you added too much flour.
Step 11
* If the cookies stretch in the oven, that means it’s too runny or the oven is not hot enough
