An easy sandwich for a quick lunch at home or in the office. This version is with mortadella, grilled eggplants, salad and tomato.

Instructions
Grill the eggplants
Step 1
Cut the eggplant in slices and grill them until they are almost crispy. Remove them from the fire, add some salt and let the cool. The cooking time depends on how thick the vegetables are.

Prepare the sandwich
Step 2
Cut the bread in half and spread some mayo on both sides.

Place some salad and tomato slices on the bottom side, the grilled eggplants and mortadella and sprinkle with some marjoram at your own taste.
