Step 1
Wash and dry the eggplant, wrap it well in aluminum foil and place on the stove on medium low. Keep it for 8 to 10 min then turn to the other side. You know it’s ready when it’s all soft. Place the eggplant in a bowl or a cutting board. Wait a few min then start peeling the eggplant drain all the excess water that comes out of it. Transfer the core of the eggplant to a clean bowl and use a potato peeler to smash mash it. You can use the knife and cut the eggplant in pieces. Add lemon juice, garlic and all the rest of ingredient and mix all very well. Place Baba Ganouj on a serving plate and garnish with parsley and pomegranate.

* you can bake the eggplant in the oven for 25 min on 375 make sure you poke holes and place the eggplant on a tray
